This inability for the bakery to operate as a bakery, has presented both a challenge and a unique opportunity for support from Notre Dame Mission Volunteers and the guidance of Sister Katherine "Sissy" Corr. Alternative (and creative) sources of income have been tested to maintain sales while major bakery operations are at a standstill. Ice was sold in the community, phone charging stations were set up and bread products in small quantities could be purchased in the bakery storefront. Systems are now being set up with the hope of resuming full bakery operations.
